I love matcha. It’s a chalky and bitter flavor yet deeply satisfying and warming. Even when I was little I loved all things green tea. Growing up, it was an obscure ingredient that you could only find at the Asian market. Now it’s all over the place. It’s as if Americans suddenly discovered matcha for the first time. And in typical American fashion, subtlety doesn’t exist. Matcha bread, matcha lattes, matcha donuts, matcha cupcakes and my favorite, matcha mochi.
I recently came across an easy and tasty matcha recipe from a Japanese store I’m crushing on in Philly called Rikumo. It’s the perfect snack to fill a matcha craving.
Matcha Mug Cake for One
4 Tbs all – purpose flour
1 tsp matcha powder
¼ tsp baking powder
1 tbsp granulated white sugar (more if needed)
3 tbsp nonfat milk
½ tbsp vegetable oil
Add all ingredients into an oversized microwave safe mug. Mix with a small whisk until batter is smooth and the same color. Microwave for 1 minute. Voila! Enjoy. Or as they say in Japanese itadekimasu!
